Turkey:

1.    Thyme, Olive oil, Sea salt, Sage,

MVC-004F.jpg (8078 bytes) 4.    In a large pan. 4 oz oil, the trinity 2 tablespoons of sage 1 teaspoon of thyme, salt and pepper. Simmer until vegetables are soft.
5.    Dress the bird! 2 loaves of stuffing bread broken up and dried over night. Break them apart into crumbs in a large bowl. 2 large chicken broths. MVC-005F.jpg (8931 bytes)
MVC-006F.jpg (6908 bytes) 6.    Turkey should be around 15 pounds. Wash thoroughly inside and put. Keep the giblets you’ll need them for the gravy.

7.    In a bowl take your stuffing bread and add some chicken broth until it’s like firm clay.

11.    Mix continually adding chicken broth slowly until the mix feels like chopped liver spread but firmer. You have the option to add a bag of stuffing mix to this. It helps the stuffing set inside the bird better. I use the one that is corn bread stuffing it has a unique flavor. MVC-011F.jpg (5545 bytes)
MVC-012F.jpg (8717 bytes) 12.    Make a tent out of tin foil for the turkey.
13.    Place the turkey in the pan MVC-013F.jpg (8524 bytes)
MVC-014F.jpg (8333 bytes) 14.    Enclose the tent around, not on the turkey.
15.    Cook the giblets and neck for the gravy. Once they are brown add 1 cup of water and one cup of chicken broth. Reduce at a low simmer for and hour or until the liquid is half of what you started with. MVC-015F.jpg (7297 bytes)
MVC-016F.jpg (7453 bytes) 16.    Take the heart and neck bone and stick it inside the turkey pan so it simmers in the turkey drippings. Take the liver separate and chop it up fine to add to the gravy.
17.    When the turkey is done take the dripping add them to the pan on the stove. Put the chopped liver in and add 1 cup of chicken stock. Add one bag of instant turkey gravy to 1 cup of cold water. Mix it in a bowl until smooth then add to the gravy pan. MVC-017F.jpg (8013 bytes)
MVC-018F.jpg (5340 bytes) 18.    Simmer until it thickens. Note* this should be done after the turkey is finished cooking and has sat at room temperature for 30 minute to cool down.

19.    You could also use flour about a tablespoon instead of instant gravy. This is for thickening.
